This delightful dish allows you to pick your favourite vegetables for roasting, making it as versatile as it is tasty. My top tip - choose an assortment of colourful veggies. Different coloured vegetables provide a variety of vitamins and minerals, so including a mix – even different coloured peppers – will ensure a nutrient-rich, delicious meal! 

Number of plants:  9 plants (more if you use different colour peppers or courgette) 

Servings: 2

Ingredients

  • 1 sweet potato
  • 1 courgette, any colour
  • 1 pepper, any colour
  • 4 -6 vine tomatoes
  • 1 red onion
  • 4 cloves of garlic, thinly sliced
  • 250g chestnut mushrooms
  • Handful of pistachios
  • 1 packet of feta
  • Sprinkle of paprika
  • Sprinkle of smoked paprika
  • Sprinkle of cumin seeds
  • Sprinkle of oregano
  • Drizzle of olive oil

Instructions

1.

Pre-heat the oven at 170 

2.

Chop the veg into even size chunks (except the garlic which was sliced thinly and evenly distributed through the veg) 

3.

Drizzle with olive oil, and sprinkle spices generously 

4.

Roast for about 15 minutes.  

5.

Remove from the oven to turn the veg and add the feta, in large cubes, and pistachios. (Don’t put these in too early or they burn!)  

6.

Return to the oven for another 10 minutes.
