Ingredients
- 500 g blueberries
- - Zest and juice of a lemon
- 1 tbsp honey
- 150 g Greek yogurt
- 50 g oats
Instructions
Place the blueberries, lemon juice and zest and honey in a saucepan and cook over a medium heat for 10 minutes. Allow to cool and then transfer to an airtight container.
This will keep in the fridge for 2-3 days.
Place the yogurt in a bowl and stir through the oats. Leave in the fridge for at least an hour or overnight.
When ready to eat, swirl through 2 tbsp of the blueberry compote.
